Buddha Bowl
Ingredients
For lentils
- 1 cup brown lentils
- 2 cups of spinach
- Salt and pepper to taste
For cauliflower
- 1 head of small cauliflower
- 2 tsp turmeric
- 2 tsp ground cumin
- 1 tsp ground chilli
- 3 Tbsp avocado oil
For garnish
- 1 cup cherry tomatoes
- Sliced almonds
- Olive oil
Instructions
- Cook lentils according to package directions. Drain. Add spinach and cook until it wilts.
- Cut cauliflower and coat with oil and spices. Bake in the preheated oven at 350F for around 20 minutes or until cooked through.
- Halve tomatoes, toast almonds.
- Plate hummus. Top with lentils and cauliflower. Garnish with tomatoes and almonds. Drizzle with olive oil.
