Gazpacho
Pairs well with grilled cheese or toast. I recommend doubling this recipe.
Ingredients
- 2 large tomatoes, halved and cored
- 1 red bell pepper, halved and seeded
- 1/4 cup red onion, coarse chopped
- 1 cup cucumber, chopped
- 1 yellow bell pepper, chopped
- 1 clove garlic, minced
- 1 serrano pepper, halved and seeded or diced depending on spice level
- 2 Tbsp green onions, minced
- Hot sauce to taste
- 3 Tbsp rice vinegar
- 2 1/2 cup V8
- Fresh parsley, minced, to taste, about 2 Tbsp
- 1/4 tsp ground turmeric
- 1 can cannellini beans, drained and rinsed
- 1 tsp lemon juice
Instructions
- Blend first three ingredients
- Mix in bowl with cucumber, yellow bell pepper, garlic, chili peopper, green onions
- Add vinegar, hot sauce, V8, parsley, turmeric, and beans
- Cover and refrigerate at least 2 hours
- Add lemon juice before serving
