Kimchi Fried Rice
Ingredients
- Cooked long grain rice
- Vegetable oil
- 16 oz mushrooms, sliced
- 1 zucchini, sliced
- 1 onion, sliced
- Kimchi (check ingredients to make sure it’s vegetarian)
- 1 tsp gonchujang paste
- 1 clove garlic, minced
- 1 green onion, sliced
- 2 eggs
- 1 avocado, diced
Instructions
- Preheat pan over medium-high heat. Sear mushrooms in vegetable oil. Add onion, zucchini, garlic, green onion, and kimchi. Cook for 2 minutes, do not overcook vegetables.
- Add rice and gonchujang paste. Cook for 2 minutes.
- Fry egg and add on top or mix egg yolk with rice. Top with sesame oil and salt to taste.
- Top with avocado.
