Ingredients

  • Cooked long grain rice
  • Vegetable oil
  • 16 oz mushrooms, sliced
  • 1 zucchini, sliced
  • 1 onion, sliced
  • Kimchi (check ingredients to make sure it’s vegetarian)
  • 1 tsp gonchujang paste
  • 1 clove garlic, minced
  • 1 green onion, sliced
  • 2 eggs
  • 1 avocado, diced

Instructions

  1. Preheat pan over medium-high heat. Sear mushrooms in vegetable oil. Add onion, zucchini, garlic, green onion, and kimchi. Cook for 2 minutes, do not overcook vegetables.
  2. Add rice and gonchujang paste. Cook for 2 minutes.
  3. Fry egg and add on top or mix egg yolk with rice. Top with sesame oil and salt to taste.
  4. Top with avocado.
