Miso Udon Soup
Ingredients
Serves 2
- 4 tablespoons miso paste
- 4 tablespoons soy sauce
- 8 oz mushrooms, sliced
- 6 cups vegetable broth
- 1 tablespoon vinegar
- 1 leek
- Chili

1 tsp White pepper
- Udon noodles

2 eggs
- Green onions
- Spinach
- 1 sheet nori
Instructions
- Make bullion by mixing soy sauce, veggie stock, spring onions, vinegar, leek, chili, and white pepper and letting boil for 30 min. Adjust flavours until to your liking. Cool and stir in miso paste.
- Boil eggs and udon noodles separately. Chill.
- Fry some sliced mushrooms in dark soy sauce.
- Cut up green onions, spinach, or other dark leafy green, and nori.
- Assemble all together!
