For lentils

  • 1 cup brown lentils
  • 2 cups of spinach
  • Salt and pepper to taste

For cauliflower

  • 1 head of small cauliflower
  • 2 tsp turmeric
  • 2 tsp ground cumin
  • 1 tsp ground chilli
  • 3 Tbsp avocado oil

For garnish

  • 1 cup cherry tomatoes
  • Sliced almonds
  • Olive oil


  1. Cook lentils according to package directions. Drain. Add spinach and cook until it wilts.
  2. Cut cauliflower and coat with oil and spices. Bake in the preheated oven at 350F for around 20 minutes or until cooked through.
  3. Halve tomatoes, toast almonds.
  4. Plate hummus. Top with lentils and cauliflower. Garnish with tomatoes and almonds. Drizzle with olive oil.
