Vegan Creamy Tomato Soup
Ingredients
- 3 cups raw cashews
- 2 large or 5 medium tomatoes
- 1 large onion
- 6 cloves minced garlic
- 5 cups vegetable broth
- 1 28 oz can crushed tomatoes
- 1/2 c orzo (optional)
- 1 Tbsp olive oil
Instructions
- In a blender combine cashews, raw tomatoes, 1 cup vegetable broth. Blend until smooth.
- Cook orzo and set aside.
- Heat olive oil and saute onions and garlic in large pot.
- Add remaining vegetable broth and crushed tomatoes. Bring to a boil and simmer for 10 minutes.
- Add cashew cream and simmer for 5 minutes.
- Add orzo. Serve.
