Ingredients

  • 3 cups raw cashews
  • 2 large or 5 medium tomatoes
  • 1 large onion
  • 6 cloves minced garlic
  • 5 cups vegetable broth
  • 1 28 oz can crushed tomatoes
  • 1/2 c orzo (optional)
  • 1 Tbsp olive oil

Instructions

  1. In a blender combine cashews, raw tomatoes, 1 cup vegetable broth. Blend until smooth.
  2. Cook orzo and set aside.
  3. Heat olive oil and saute onions and garlic in large pot.
  4. Add remaining vegetable broth and crushed tomatoes. Bring to a boil and simmer for 10 minutes.
  5. Add cashew cream and simmer for 5 minutes.
  6. Add orzo. Serve.
